Cream Cheese Brownie Day

In honour of Cream Cheese Brownie Day on 10 February (yes, it’s a thing), the girls in Ursula House cooked up a storm of yummy brownies. 

We thought it only fair we share the recipe.

INGREDIENTS

Brownie
175g butter
1/2 cup chocolate chopped
1/2 cup cocoa
1/2 cup white sugar
1/2 cup brown sugar
2 eggs + 1 yolk
1tsp vanilla
1/2 tsp salt
1 cup flour

Cream Cheese Mixture
250g cream cheese – softened
1/4 cup white sugar
1 egg
1/2 tsp vanilla

METHOD

Brownie

  1. Preheat oven to 180 and line a slice/brownie tin with paper
  2. Melt the butter and the chocolate together
  3. Add cocoa and sugars to the chocolate mix and stir until dissolved
  4. Add eggs/yolk 1 at a time, stirring between
  5. Add vanilla, salt and flour and mix well
  6. Pour 3/4 of the brownie mixture into the prepared tray

Cream Cheese Mixture

  1. Beat the cream cheese and sugar together until creamy
  2. Beat in the eggs and vanilla
  3. Pour mixture into the pan on top of the brownie mix and top with the remaining 1/4 of brownie mix
  4. Use a knife to swirl the mixture 
  5. Bake for 30 – 45 minutes, until a toothpick comes out clean
