Cream Cheese Brownie Day

In honour of Cream Cheese Brownie Day on 10 February (yes, it’s a thing), the girls in Ursula House cooked up a storm of yummy brownies.
We thought it only fair we share the recipe.
INGREDIENTS
Brownie
175g butter
1/2 cup chocolate chopped
1/2 cup cocoa
1/2 cup white sugar
1/2 cup brown sugar
2 eggs + 1 yolk
1tsp vanilla
1/2 tsp salt
1 cup flour
Cream Cheese Mixture
250g cream cheese – softened
1/4 cup white sugar
1 egg
1/2 tsp vanilla
METHOD
Brownie
- Preheat oven to 180 and line a slice/brownie tin with paper
- Melt the butter and the chocolate together
- Add cocoa and sugars to the chocolate mix and stir until dissolved
- Add eggs/yolk 1 at a time, stirring between
- Add vanilla, salt and flour and mix well
- Pour 3/4 of the brownie mixture into the prepared tray
Cream Cheese Mixture
- Beat the cream cheese and sugar together until creamy
- Beat in the eggs and vanilla
- Pour mixture into the pan on top of the brownie mix and top with the remaining 1/4 of brownie mix
- Use a knife to swirl the mixture
- Bake for 30 – 45 minutes, until a toothpick comes out clean
